Old man winter sitting on the porch this morning.  I like poems, so I thought about giving writing one a try.

The frozen H2o
Its journey downward begins
Born in the clouds
In the mountains it awaits to flow.

Green, blue, wet and alive

The sound of air and water collide
Everything breathes deeply.The cosmic clock ticks on
Smooth cruising.

I love the time winter gives me to cook at home.  There is something everyone can agree on, and that’s food made in a crock pot or slow cooker.  There are recipes out the wazoo for slow cookers.  Something I grew up making and is a staple at the Edens household is what I call Crockpot Tacos.

These are so deadly delicious and crazy easy to make.

Crockpot Tacos

Beef or Pork Roast Can also use boneless chicken thighs. Here is the Rub:

  • Equal parts cumin and chile powder
  • Onion powder
  • Cayenne
  • Salt
  • Pepper
  • Fresh minced garlic

 

Start by rubbing your roast LIBERALLY with the dry rub except for the fat side on top.  Then lots of fresh garlic on the top.  Finish with more dry rub on top of that.

Put In crock pot early morning or night before on low. Use tongs to shred your meat.

The Rest:
  • Corn or flour tortillas ( I prefer two corn doubled up)
  • Cilantro
  • Chopped tomato
  • Thin sliced radish
  • Chopped onion
  • Lime
  • Hot sauce of your choice
Warm or fry your tortillas. Go ahead and build the taco.
